Khaliat Nahal a traditional Middle eastern buns filled with cream cheese and glazed with sugar syrup. This is a modified version of Aparnaji's recipe her blog (http://www.mydiversekitchen.com/) is a pleasure to the senses.
I have just made the buns and served it with a peach jam glaze... They are soft and a perfect for a Fall afternoon snack...


1 cup lukewarm milk
1 1/2 tsp instant yeast
1 tsp sugar
2 1/2 cups all-purpose flour
3 tbsp sugar
1/4 tsp salt
40gm butter, melted
2 tbsp milk for brushing the dough
2-3 tbsp olive oil


1. Measure all the ingredients. Dissolve the yeast and sugar in luke warm milk and set it aside for 10-15 minutes for the yeast to activate.
2. Melt the butter.
3. In a mixing bowl place the flour, sugar and salt and mix them well, add the melted butter and the raised yeast mixture and allow to form a soft dough. If required add a little milk or floor.
4. Knead to a soft dough. Rest the dough on a well oiled container, cover with a wet cheese cloth and allow the dough to raise in a warm place. This could take 45 minutes to an hour.
5. Grease a cake pan with olive oil.
6. Knock the dough and shape them into equal size rounds 10-15 pieces. To fit evenly into the round cake pan.
7. Rest the bread for 20 minutes till it has raised, brush with milk and bake at 180C for 20-25 minutes.

You could do your own sweet and savory filling and stuff inside the buns.

Serving Ideas

Serve along with a cup of sulaimani ( Middle eastern sweetened black tea) or Turkish coffee
