Trimming a bag of green Brussels sprouts is such a satisfying thing to do. The crunchy and vegetal flavor is a pure love affair. They are a super food packed with lot of essential vitamins.

Onions caramalized in butter, with a hint of cider vinegar and brown sugar add a sweet note, giving a good sear to the brussel sprouts truns it just golden, the Parmesan gratin gives a delicious touch,get ready to savor some comfort food...


Brussels sprouts- 500g
onion - 300g
butter- 120g
rosemary- 3-4 sprigs
brown sugar- 1 tbsp
cider vinegar- 1 tbsp
sea salt- to taste
cracked pepper- to taste
Parmesan (grated)- generous amount on top for gratin.


1. Trim the Brussels sprouts by removing the outer layer and cut them into quarters length wise,rinse them under running water and set aside on a strainer.

Cider and Red onion Jam

2. Thinly slice the red onion, wash and finely chop the rosemary leaves with a sharp knife.
3. Heat a pan add the butter and the red onions, once translucent, add rosemary, brown sugar,cider vinegar and season with sea salt and cracked pepper.
4. Lower the flame and cook till the onion is caramelized, soft and mushy texture.
5. Remove the jam and set aside.

6. In the same pan sauté the Brussels sprouts and season them, till they become golden brown on all sides, add the onion jam and mix well.
7. Place the mixture on a baking dish, generously grate Parmesan on top and bake in a pre heated oven at 175C for 10-15 minutes.
