Fragrant, ripe apricots are a true delight. Perfect for preserves, juicy apricots are lovely had on their own. They are quite versatile in salads and stews.

Apricot preserve with a hint of ginger, lemon and lavender, these subtle flavors make the preserve a perfect pair to your cheeses and breads. Enjoy!


apricots fresh- 600g
ginger grated- 1 tbsp
lemon rind- 1 tbsp
lemon juice- 2 tbsp
honey- 3 tbsp
brown/ demerera sugar- 100g
lavender- 1 tsp
pectin- 1/2 tsp


1. Cut the apricots into cite sized chunks.
2. In a pot place the apricot chunks, grated ginger, lemon rind, honey and sugar allow to stew gentley for 10 minutes.
3. Dissolve pectin in lemon juice and stir them into the mixture.
4. Tie the lavender buds in a cheese cloth and drop it in.
5. Cover and cook for 25 to minutes over slow heat.
6. Clean the edges from time to time using a spatula.
7. Cool and store in an air tight container. Store under refrigerated conditions for 2-3 weeks.

Serving Ideas

Serve along with warm cheese croquettes with a glass of Prosecco.
