Flavors of summer, sweet Sindhri mangoes, buttery avocados,pickled chilis, lime and cilantro, fresh , healthy and easy salsa in minutes to top your favorite wraps. Enjoy!

Ingredients

ripe mango- 2 each
ripe avocado- 1 each
pickled birds eye chilies - 5-6 each
lime- 1 each
cilantro sprigs- a handful
olive oil- a generous drizzle
sea salt- to taste
cracked black pepper- to taste

Method

1.Place 1 part water and two parts vinegar in a pan, a tsp of sugar and reduce, throw in the fresh
chilies and allow to cool.(These chilies can be kept for a few weeks in an air tight container, they develop a well rounded flavor after a couple of days)
2.Peel and cut the mangoes into cubes, halve the avocado and place them into a bowl.
3.Remove the seeds from the pickled chilies and cut them in a slant, so that the edges curve.
5.Place them in the mixing bowl along with cilantro leaves, fresh lime juice, sea salt and cracked pepper.
6.A generous drizzle of olive oil and mix them gently with a spoon. Allow the flavors to infuse for half an hour and top them on a crunchy summer vegetable burrito with some queso fresco.
