This is a classic flavor combination. Vine ripened cherry tomatoes are sweet the balance of flavors with sea salt and thyme and the aroma of olive oil celebrates the medley of ingredients.


300 grams cherry tomatoes
60 milliliters olive oil
3 cloves garlic
5 sprigs thyme
to taste sea salt
to taste cracked black pepper


1. Preheat heat oven to 180C

2. Wash cherry tomatoes in cold water, pat dry.

3. Place them in a bowl and place the thyme sprigs, crushed garlic.

4. Drizzle a generous amount of olive oil, rain some sea salt and cracked pepper from the mill.

5. Gently massage it till they look glossy. Place in a baking tray and into to the oven they go for 6-10 minutes.
6. Heat olive oil in a pan and blister the tomatoes, remove from heat and allow them to wilt.

Serving Ideas

Succulent by themselves.
Accompanies your roasts and pastas.
Left overs can be tossed into salads.
