Soft and fluffy pancakes topped with a lobe of butter and maple syrup is a blissful start to a weekend. Celebrate simple pleasures...


all purpose flour- 125g
sugar- 1 tsp
salt- a pinch
baking powder- ½ tsp
baking soda – a pinch
butter milk- 60ml
milk- 30 ml
egg- 1 each
unsalted butter melted- 50ml
butter- for greasing
maple syrup and butter – for serving


1.Mix all the dry ingredients in a bowl.
2.In a measuring jug mix the milk, buttermilk and egg and whisk to a smooth mixture, pour the melted butter and mix well.
3.Pour the wet ingredients on to the bowl with dry ingredients and gently combine with a lift and fall motion.
(Note: the softer the mixture the lighter the pancakes)
4.Heat griddle over medium heat and smear oil or butter, ladle equal quantities of pan cake batter and you will see bubbles on top and the bottom turns brown, flip and cook the pancakes for another 2 minutes and serve.
