Fall/ Autmun and winter are the perfect time to have warm salads. Thinly sliced roots and squash are perfect sides for hearty meals. This is a simple salad with sage butter, garlic, thyme and capers... Celebrate Seasons and Produce!


butternut squash - 400g
garlic sliced thin- 2 cloves
shallots sliced thin- 2 - 3 heads
sage butter- 2 tbsps
pickled capers- 15- 20 pieces
sherry vinegar- 2 tsp
salt- to taste
cracked pepper- to taste
sage tips- Garnish


1. Peel butternut squash and slice them thin on a mandoline (slicer).
2. In a cast iron pan add sage butter, chopped garlic, shallots and caramelize slowly.
3. Add the thinly sliced butternut squash and saute , add a generous splash of sherry vinegar and place a lid and allow to sweat for 3-4 minutes.
4. Toss in some capers and season with salt and pepper.
(be careful while adding salt as capers are quite salty if they come in brine)
5. The butternut squash should just be cooked enough to the bite.
6. Garnish with sage tips and serve...
