Ingredients

Dough
1/2 cup warm milk
1 tsp sugar
2 tsp active dry yeast
2 3/4 to 3 cups all-purpose flour
1 tsp salt
25gm butter, soft at room temperature
3/4 to 1 tsp garlic paste
3/4 cup milk (+ a couple of tbsp to brush over the bread)

Filling
15 to 20gm melted butter
2 tsp dried Provencal or mixed herbs*
1 tsp crushed caraway seeds
Crushed pepper/ red chilli flakes to taste
1/2 cup grated cheddar cheese

Method

1.Mix yeast, sugar and luke warm milk in a bowl and allow it to bloom for 5 minutes.
2. In a mixing bowl place flour, salt, chopped garlic and softened butter. Pour the yeast mixture and the rest of the milk in to the flour and knead well to form a soft dough.
3. Cover the dough with a wet cloth and rest for and hour and half. Till the time it doubles in size.
4. Knock the dough. Spread using a rolling pin into a 12inch by 12 inch square.
5. Apply melted butter evenly through out the dough, sprinkle the chopped herbs, caraway seeds, and grated cheddar cheese.
6. Gently roll the rolling pin to make the cheese and herbs stick to the dough. Freshly cracked pepper and a touch of sea salt if required.
7. Grease a bread pan, cut the dough into 3 inch wide strips and cut them to size to fit the pan.
8. Arrange the dough and rest for an hour for it to proof again. Pre-heat oven to 180C and bake for 35-40 minutes.

Serving Ideas

Serve along with a hot bowl of soup or a hearty barley and root vegetable broth.
